Portobello mushroom burger, grilled baby artichokes, grilled potatoes – July 5, 2012

We had a great Fourth of July party at Ryan and Jon’s where there were a lot of really good things to eat. I made Southwest bean salad and we also made a fritatta with potato, mushrooms, onions and roasted red pepper as an appetizer. Jonathan made shrimp tacos which was really nice of him to think of my healthy eating style when picking out an entree. Unfortunately I did not take any pictures.

On Thursday we had our own little grill out. John had a hamburger and I had a grilled portobello mushroom. My burger went on a thin sandwich round with a little smear of goat cheese, grilled onions, roasted red pepper and arugula. We also grilled some baking potatoes that I had mostly microwaved and baby artichokes.
