Fish tacos, black beans and Mexican farro – August 2, 2012

Really there is no such thing as Mexican farro but I figured that if there is Mexican rice then there’s obviously a use for other leftover grains. My side dish consisted of farro from Chicken Monday with some of Jack’s salsa in it. I also used the salsa in the black beans. We get Jack’s salsa in the refrigerator case at Costco and of all the fresh salsas we’ve had, we like this one the best. The fish for our tacos was ono also from Costco in the freezer case. The tacos were garnished with cabbage, cilantro and crema. I made the crema from yogurt, salt and cumin. It was a tasty although not authentic dinner.
