Bison medallion with curried cauliflower and green beans – August 23, 2012

I stopped at Whole Foods in Palo Alto while I was over on the peninsula having lunch with Sarah and picked up a couple of packages of bison medallions. Each frozen package holds two medallions. Each piece contains 180 calories and 2.5 grams of fat so it fits right in my wheelhouse of acceptibility. John pan roasted the two medallions. In the meantime I pressure cooked a head of cauliflower and mashed it up with some butter spray and curry spices. I also cooked a big handful of green beans. The dish was finished off with a pan sauce made from the drippings from the bison, some wine and a little ketchup.

The meat turned out to be a little tough but still tasty. The veg was great.
