I have been thinking about giving up on this blog. After all, I just keep eating the same things over and over again and I haven’t been particularly successful as of late in losing any weight. I have been successful in maintaining weight and perhaps that is a much greater success than losing it. I’ve always been pretty good at losing weight. It’s after the diet is done that’s the hard part.
So maybe I’ll just keep on recording our dinners. Perhaps it helps.
Quick and easy dinner for tonight – I cooked farro using the oven method. I substituted chicken stock with curry powder and garlic mixed for the usual water in the recipe. Shortly before that was done, I sauteed some carrots, onions and mushrooms. Then I added a little chicken stock and plumped up some raisins and steamed broccolini. When the farro came out of the oven, I stirred it into the vegetables and added some cut up pre-cooked chicken strips. It came out pretty well.
