Today is a new beginning. I am not going to dwell on the fact that it is almost two and a half years of being mostly on but lately off my healthy eating plan. Onward!
For breakfast this morning I had a fried egg cooked in a non-stick pan with butter spray and a multi-grain, 100 calorie English muffin. It’s my favorite breakfast. I might as well start off with something I really like. Oh, and a cup of tea.
For lunch I had 2 ounces of the Kirkland (from Costco) cooked chicken pieces. Of all the brands of chicken pieces, I like Costco’s the best. I had this on two slices of reduced calorie multi-grain bread with a teaspoon of light mayonnaise and some arugula. I try to always eat whole grain products since they have lots of fiber which provides better calorie content.
And I had Chicken Monday for dinner –
My portion is 3.5 oz. of chicken breast with chicken gravy from a packet enhanced with some mushrooms, rutabagas that I pressure cooked and mashed with a little faux butter, and little green beans cooked in a dash of water and a teaspoon of butter so they browned a bit.
I also had popcorn. I washed it all down with Hansen’s diet ginger ale. I am feeling quite proud of myself tonight.
