June 2, 2013 – Fish tacos with black beans

We have some Ono in individually wrapped portions in the freezer. I know that it is extra packaging but I like to buy my portions of fish and chicken this way. It keeps them from getting freezer burn.

John seasons the fish and cooks it in a pan sprayed with olive oil cooking spray. He also heats up the corn tortillas in the microwave. In the meantime, I season the black beans with cumin and add cilantro, lime juice and Jack’s Salsa. (We like Jack’s a lot.) I cut up some cabbage and chop some more cilantro. The tacos include the fish, shredded cabbage, cilantro, salsa and a squeeze of lime. Since I cut up too much cabbage I make a little cole slaw with reduced fat mayo and Mexican spices.
