We are in St. George having a little vacation from our usual vacation lifestyle. Being in St. George means fewer meals eaten away from home. There are really only two or three places where we eat out here. The Club dining room at Entrada is one. We have to eat there because there is a minimum we have to meet quarterly. A lunchtime favorite is the Mongolian BBQ in the Zion shops. And if we happen to be over near Zion NP, we eat at Oscar’s, famous for fish tacos and grilled portobello mushrooms.
Tonight we make stuffed red bell peppers. I cut them in half and stuff them with a combination of ground turkey, farro, mushrooms, onions, and chilis and serve them with a tomato sauce. This is a really tasty dinner and not bad from a diet point of view. Unfortunately, when John decides to have a third piece, I do too.
