January 20, 2014 – Meatless Monday – Chickpea soup

Jonathan, Nathan and Sam are over today so dinner planning takes a back seat. After they leave we try to figure out what we have on hand to make some sort of dinner with. I still have two containers of chickpeas from the pound I soaked so one of those will be the basis of dinner. I saute some onions and add whatever vegetables I can find in the refrigerator. This turns out to be celery, parsley and Brussels sprouts. The chickpea cooking liquid is the stock for the soup. As it turns out this dish is really good! So good, in fact, that I am in too much of a hurry to eat it to take a picture!
