Penne with fresh produce

Using fresh produce from the garden made this pasta dish especially delicious. I peeled the tomatoes so there weren’t any tough skins. John liked this enough that he asked if I remembered how I made the sauce so we can have it again!

Hot dogs with two salads

We are still working our way through our big package of Costco hot dogs. It’s no trouble since everyone here loves hot dogs. I made a Greek salad and a lentil salad to go with the dogs.

Pasta with corn and bacon

Sarah got this recipe from Southern Living. https://www.southernliving.com/creamed-corn-pasta-7496338. Corn goes well with bacon and, in my book, pasta goes well with anything! We only had macaroni and I think this dish could have used a larger shape. The recipe recommends penne or casarecci. It was really delicious!

Chana dal with rice and kale

Chana dal is a favorite of John’s. We make it in the Instant Pot. It looks like a winter dinner but using the Instant Pot keeps the kitchen cool.
