I have not posted anything this week since all we have done is try to eat all the stuff I made and bought for Father’s Day. So it has been a week of ribs and burgers pretty much. Tonight to finish up the polenta which was supposed to be used for polenta croutons in a Caesar salad, we made chicken cacciatore served with polenta. The tasty sauce is made of onions, peppers, fennel, peppedew peppers, garlic, cherry tomatoes, oregano, and thyme. There’s also some red wine, tomato paste, and chicken stock in it. I warmed up pieces of polenta in the sauce. John cooked the chicken separately.
