The other day we were at Costco when I noticed that they carried Gorton’s crispy fish fillets. Having spent part of our lives living in Massachusetts we were familiar with the Gorton fisherman and remembered plenty of meals when the kids were little that the crispy fish fillets were the star of dinner. At only 250 calories for 2 fillets I decided that buying a bag would be a reasonable way to get an enjoyable, quick meal especially on the night’s when we don’t feel like making an effort.
The fish fillets cooked from frozen in the air fryer (my first attempt at air frying) for 12 minutes, John toasted up a couple of buns and made a tartar sauce. I organized a big salad and, voila, we had a tasty dinner in less than 30 minutes.
