January 29, 2014 – Splurge Wednesday – Chilean Sea Bass

Our dinner tonight is kind of a splurge. Chilean sea bass is not an inexpensive fish but it is so, so tasty. I make a topping of mushrooms, lemon peel, garlic, shallot, carrot, and parsley. I use the food processor to make all the pieces quite small. John sautes the mixture in a little olive oil spray until it is thoroughly dried out. Some of the topping goes underneath the fish and the rest on top. The pieces bake in a 350 degree oven for about 8 minutes with the last two minutes on broil. The fish is served with couscous left over from the other night and broccoli. I extend my weird mustard sauce from the Mongolian pork chop night for a little sauce on the broccoli. We have a nice bottle of cabernet franc. What are we celebrating? Nothing, really. It’s just nice to treat ourselves.

January 27, 2014 – Pantry Monday – White beans with tuna, vegetables and juniper berries

Dinner tonight is a made from stuff I have in the refrigerator and pantry. Yesterday I soaked and cooked some white beans. They are so much more delicious than beans you would get from a can and take almost no work. I combine the beans with some vegetables, add a can of tuna, and some juniper berries. Dinner is done in a flash.

January 26, 2014 – Meatless Sunday – Mushroom ravioli with vegetables

Tonight’s dinner is vegetarian again! The ravioli are from Costco and are filled with mushrooms and cheese. I serve them in a chicken broth with various vegetables.

January 24, 2014 – Meatless Friday – Chickpea and sweet potato stew with couscous

It seems that we are having a lot more meatless days than just Meatless Monday. Tonight’s dinner is a stew of chickpeas, that I had soaked and cooked, with sweet potato, prunes, and various other vegetables. It is really too sweet a stew for me but John likes it.

January 23, 2014 – Salmon with brown rice and Brussels sprouts

The trouble with making or buying a lot of something is that you have to keep eating it. I made a bunch of brown rice a couple of days ago so tonight I reheat it with lots of new vegetables. I made weird mustard sauce for Tuesdays Mongolian pork chop so tonight it is the sauce for our salmon. I bought a stalk of Brussels sprouts last week so we have to keep having them as our green veg. Dinner tonight is pretty good. The weird mustard sauce goes better with salmon than with Mongolian pork chops.

January 22, 2014 – Turkey chili

Turkey chili is tonight’s dinner. John is working today and I have a dental appointment so it is good to come home to an already made dinner. It is good. Maybe not our best. I forgot to take a picture. Imagine a bowl full of brown ingredients.

January 21, 2014 – Marinated pork chops with rice and red cabbage

I need to find more recipes to serve to friends when they come over. I look through my cookbooks and find a recipe for Mongolian pork chops from Mustards up in Wine Country. We spend the day making the components for this dish which include a spicy mustard sauce, braised red cabbage and the marinade for the pork. John also spends some time making a turkey chili for later on in the week. Long story short, we slow cook the marinated pork chops until their internal temperature reaches 130F and then sear the outsides on a hot grill pan. I make the weird mustard sauce and also the too sweet red cabbage. The pork is a great success but I doubt I will make any of the rest of it again.

January 20, 2014 – Meatless Monday – Chickpea soup

Jonathan, Nathan and Sam are over today so dinner planning takes a back seat. After they leave we try to figure out what we have on hand to make some sort of dinner with. I still have two containers of chickpeas from the pound I soaked so one of those will be the basis of dinner. I saute some onions and add whatever vegetables I can find in the refrigerator. This turns out to be celery, parsley and Brussels sprouts. The chickpea cooking liquid is the stock for the soup. As it turns out this dish is really good! So good, in fact, that I am in too much of a hurry to eat it to take a picture!

January 19, 2014 – Scallops with new potatoes and green beans

Our dinner tonight features yummy scallops. To go along with the scallops, I make the tartar sauce from the Fish Market. It also tastes great on the potatoes. The green beans are cooked quickly in a little water and then toasted with some faux butter.

January 18, 2014 – Stir-fry shrimp and vegetables with brown rice

Sarah came over yesterday so we ended up going out to dinner. Tonight’s dinner of shrimp stir-fry is yesterday’s dinner postponed. I cook the brown rice using the oven method. The house smells wonderful with the nutty smell of cooking rice. I cut up a bunch of vegetables. John marinates the shrimp. In no time at all we have dinner.
