Seared tuna with sesame rice and roasted green beans – September 2, 2012

On Saturday, John, Jonathan and I took the trip through Yosemite National Park to St. George. Jon loves to come to St. George and I am sure we will be very busy playing tennis, golf, hiking, swimming, etc. On Saturday night, after a long day in the car, we just rustled up some pasta but on Sunday we got more adventurous.

We bought some tuna at Costco. John marinated it and covered it with black and white sesame seeds. A quick sear was all it needed. I made some oven method brown rice and added some toasted black sesame seeds. I also roasted green beans in the oven with a panko bread crumb-sesame seed coating. To serve with the beans I reduced some fish sauce, balsamic vinegar and soy sauce. Everyone agreed that the dinner was a success.

Vegetables with a side of vegetables – August 31, 2012

I ate a grilled potato and a bunch of vegetables. John ate the same thing but also added a bean burger. We had a little cheese on the green beans. the end.

Bison, new potatoes and green beans – August 30, 2012

Wednesday night we went out to dinner with friends. We went to a small plates place where we shared a bunch of appetizers. Unfortunately, they were not on my list of things to eat. I tried to hold my hand in my lap. For the main course I had a small beet salad and some tuna tartar and sashimi. It was good but not nearly enough. When we got home I made myself a sandwich. Now on to Thursday’s dinner.

Did you know that buffalo are different from bison? John told me this. Apparently bison were called buffalo when old world people saw them because that is the only reference point they had when it came to bovine looking animals.

Anyway, low in fat and calories, bison is good for pretending you are eating beef. I am hankering for a hamburger. I guess this will have to do.

Seared scallops with butternut squash and green beans – August 28, 2012

This dinner made such an attractive plate. John made a pan sauce for his scallops and I made a little low fat tartar sauce. At the same time as I was roasting the butternut squash, I also roasted some golden beets and our first course was a lovely salad of arugula, roasted beets, fresh mozzarella and tomatoes.

If it’s Monday, it must be chicken – August 27, 2012

I have been thinking about giving up on this blog. After all, I just keep eating the same things over and over again and I haven’t been particularly successful as of late in losing any weight. I have been successful in maintaining weight and perhaps that is a much greater success than losing it. I’ve always been pretty good at losing weight. It’s after the diet is done that’s the hard part.

So maybe I’ll just keep on recording our dinners. Perhaps it helps.

Quick and easy dinner for tonight – I cooked farro using the oven method. I substituted chicken stock with curry powder and garlic mixed for the usual water in the recipe. Shortly before that was done, I sauteed some carrots, onions and mushrooms. Then I added a little chicken stock and plumped up some raisins and steamed broccolini. When the farro came out of the oven, I stirred it into the vegetables and added some cut up pre-cooked chicken strips. It came out pretty well.

Bison medallion with curried cauliflower and green beans – August 23, 2012

I stopped at Whole Foods in Palo Alto while I was over on the peninsula having lunch with Sarah and picked up a couple of packages of bison medallions. Each frozen package holds two medallions. Each piece contains 180 calories and 2.5 grams of fat so it fits right in my wheelhouse of acceptibility. John pan roasted the two medallions. In the meantime I pressure cooked a head of cauliflower and mashed it up with some butter spray and curry spices. I also cooked a big handful of green beans. The dish was finished off with a pan sauce made from the drippings from the bison, some wine and a little ketchup.

The meat turned out to be a little tough but still tasty. The veg was great.

Turkey chili with arugula salad – August 22, 2012

I think this week is getting boring. We have eaten these meals a lot of times in the last 87 weeks of the new healthier lifestyle. I’ve been looking at some recipes from Food and Wine. I just have to figure out how to adapt them for maximum flavor and minimum fat.

We whipped up this turkey chili from beginning to serving in about an hour and a half. Half an hour for active preparation and an hour for simmering. It turned out well and you know we always enjoy a GBOF. I like the arugula salad with it because it lends a bitterness from the greens and acid from the salad dressing.

Lobster tail, new potatoes and collard greens with corn – August 21, 2012

This is pretty much the go-to combination when we make lobster tails. This week, though, I had a leftover grilled ear of corn which made the collard greens with corn even tastier.

Chicken Monday – August 20, 2012

Over the weekend we drove home from St. George. We sat in a bar and ate snacks while watching tennis on TV on Saturday night for dinner. On Sunday, after our arrival home, the kids and grandkids came over and we had steak and shrimp fajitas, grilled corn and caprese salad. I wish I had taken pictures of Sunday’s dinner. It was so good.

But Monday rolled around and if weekends are for relaxing one’s standards a bit, Monday is for getting back on track. This was a typical Chicken Monday – pan-roasted chicken with chicken/mushroom gravy, rutabagas and Brussels sprouts. I added some onions and garlic to the sprouts to stretch them out and also added a couple of small potatoes to the rutabaga mash. There just were not many good looking rutabagas or Brussels sprouts in the store this week.

Fish duet with new potatoes and all the vegetables we have left – August 16, 2012

We had some extra cod and salmon that we didn’t use in the Mediterranean soup so John put them on the cedar plank and grilled them outside. Since we are going home on Saturday my job was to find a way to incorporate all the vegetables we have left into some sort of cohesive dish. We had nine little potatoes so I steamed them. The other vegetable turned out to be kind of melange of cabbage, carrots, celery, zucchini and onion with Thai seasoning. I used a little sugar, the juice of a lime, some soy sauce since I didn’t have any fish sauce and sesame oil. Was it successful? John liked it but of course he likes everything. I thought the cabbage was a little weird in it but it didn’t stop me from eating my half of the dish.
