We are finishing up April with one veg and two fish dishes. On Tuesday Sarah made a delicious pasta dish with shells and Brussels sprouts and cabbage. The top was sprinkled with crumbled goat cheese!

Wednesday John and I opted for a simple dinner of Gorton’s fish fillets that we made in the air fryer. They came out super crispy! I added some homemade coleslaw and a salad for side dishes.

Thursday John pan cooked a piece of swordfish and I made a hearty Sicilian sauce to go with it.
