June 5, 2013 – MEAT!!!!!!!!!!!!!!!

Once in a while we feel like eating meat. This happens maybe once every month or two. So we bought a steak. We also got some baking potatoes and green beans.

John seasons our steak early in the day and lets it dry out uncovered in the refrigerator. He lights the gas grill and lets it heat up for 10 minutes. Since our steak is thick he cooks it for 4 minutes on each side and then lets it rest for 5 minutes.

I microwave one potato and cut it in half longitudinally. John also takes this out to put on the grill for some extra flavor and crispness. I also make the green beans. I take a big risk and do not french them. They seem pretty tender and flavorful as is and I know that John is not a great fan of my frenching beans. I put them in a high-sided pan with a little water, some mushroom, sage and green onions. As the water evaporates and the beans become tender, I add a teaspoon of butter. Uncovered, I let the water boil away. The little bit of fat browns the beans and mushrooms. It turns out really tasty.

June 4, 2013 – GBOF Tuesday

Since Monday is usually weigh-in day, then Tuesday is a great day for a giant bowl of food. Tuesday’s dinner this week is whole wheat pasta with vegetable tomato sauce. The sauce includes mushrooms, onions, chilis and zucchini. Since there is no fat in it and no meat plus the whole wheat pasta is fiber-full, there is no harm in eating a bunch of it. Sometimes it’s nice to feel full.

June 3, 2013 – Chicken Monday (again)

Tonight I am thinking, oh chicken Monday, do I really want to eat you again? Surprisingly, though, by the time we finish cooking I am happy that I do not let my cravings get the best of me. The dinner is very delicious and quite filling.

On the menu are pan roasted chicken, mashed rutabagas, broccoli/cauliflower melange, and chicken gravy.

One of my tasks is to peel and pressure cook the rutabagas. After giving the pressure cooker a quick cool down I mash them up.

I also cook the broccoli and cauliflower on our new, cool induction burner which was a gift from Ryan and Jonathan. John and I bump into each other a lot less around the stove since we got the induction burner.

John takes care of searing and roasting the chicken breasts. He tests their doneness using a probe thermometer.

June 2, 2013 – Fish tacos with black beans

We have some Ono in individually wrapped portions in the freezer. I know that it is extra packaging but I like to buy my portions of fish and chicken this way. It keeps them from getting freezer burn.

John seasons the fish and cooks it in a pan sprayed with olive oil cooking spray. He also heats up the corn tortillas in the microwave. In the meantime, I season the black beans with cumin and add cilantro, lime juice and Jack’s Salsa. (We like Jack’s a lot.) I cut up some cabbage and chop some more cilantro. The tacos include the fish, shredded cabbage, cilantro, salsa and a squeeze of lime. Since I cut up too much cabbage I make a little cole slaw with reduced fat mayo and Mexican spices.

June 1, 2013 – Stuffed peppers

We are in St. George having a little vacation from our usual vacation lifestyle. Being in St. George means fewer meals eaten away from home. There are really only two or three places where we eat out here. The Club dining room at Entrada is one. We have to eat there because there is a minimum we have to meet quarterly. A lunchtime favorite is the Mongolian BBQ in the Zion shops. And if we happen to be over near Zion NP, we eat at Oscar’s, famous for fish tacos and grilled portobello mushrooms.

Tonight we make stuffed red bell peppers. I cut them in half and stuff them with a combination of ground turkey, farro, mushrooms, onions, and chilis and serve them with a tomato sauce. This is a really tasty dinner and not bad from a diet point of view. Unfortunately, when John decides to have a third piece, I do too.

May 21, 2013 – Dining out in Wine Country

We have a pickup from our wine club at Chateau St. Jean. So of course this means a day’s worth of tasting wine and eating breadsticks.

Of course we drink some wine. We skip lunch due to our overindulgence of breadsticks and freebies of chocolate and cheese. Plus I had eaten a very small breakfast. Luckily I am a wine drinking pro and can get through a day of sipping quite nicely!

By the time we get over to the Napa side of the world, it is dinner time. We stop by French Laundry to see if there is a cancellation. No such luck. So we decide to go to Bottega where we have been many times and have not been disappointed. We are not disappointed today! John and I share appetizers of shaved Brussels sprouts and grilled octopus. John has short ribs for dinner and I have a galette of potatoes and zucchini with a fresh tasting tomato sauce. When I eat out I always choose either a shellfish, fish or vegetarian entree. Although there is more fat than we use at home at least the protein is either plant or fish. We have a lovely dinner to finish off a lovely day.

May 20, 2013 – At last, Chicken Monday

Today is a new beginning. I am not going to dwell on the fact that it is almost two and a half years of being mostly on but lately off my healthy eating plan. Onward!

For breakfast this morning I had a fried egg cooked in a non-stick pan with butter spray and a multi-grain, 100 calorie English muffin. It’s my favorite breakfast. I might as well start off with something I really like. Oh, and a cup of tea.

For lunch I had 2 ounces of the Kirkland (from Costco) cooked chicken pieces. Of all the brands of chicken pieces, I like Costco’s the best. I had this on two slices of reduced calorie multi-grain bread with a teaspoon of light mayonnaise and some arugula. I try to always eat whole grain products since they have lots of fiber which provides better calorie content.

My portion is 3.5 oz. of chicken breast with chicken gravy from a packet enhanced with some mushrooms, rutabagas that I pressure cooked and mashed with a little faux butter, and little green beans cooked in a dash of water and a teaspoon of butter so they browned a bit.

I also had popcorn. I washed it all down with Hansen’s diet ginger ale. I am feeling quite proud of myself tonight.

May 17, 2013 What’s been happening

It’s been more than six months since I posted. That can only mean one of two things. Either I am so competent in my weight loss efforts that I don’t need to post what I eat anymore. OR, I have fallen off the weight loss wagon and am out of control and gaining weight. Hmmmm, what do you think? I would say number two. After all I am a food junkie and once I get on a roll (or a bagel), I am hard to stop.

So the truth is I have been traveling and holidaying for the last six months. I have also injured my hip and my knee which means I can’t exercise like I used to. I have gained 20 lbs. back. It makes me sad. I tried so long and so hard to lose weight and I was so successful. But put a couple of stumbling blocks in my path and I fall easily into old habits. The truth of the matter is, though, that I still have lost 40 lbs. and I could get back to where I was and beyond. The question is how to do it.

Tonight we had a vegetable curry with brown rice. In the vegetable portion were chickpeas, cauliflower, carrots, onions, shredded Brussels sprouts, and chiles. I ate a reasonable portion. In fact it would have been a perfect dinner if it had not been accompanied by some cheese and wine. So I actually have eaten totally on plan today except for the cheese and wine. Maybe tomorrow I can do a little better.

I think I look like a fat person again. It is very discouraging. My clothes don’t fit very well and my self-esteem is shot. I got blood work back today and my numbers are edging up toward unacceptable. It is the perfect storm for a binge of eating.

What I am going to try to do is to post my pictures of what I eat again and be honest in my commentary. Then I will read it again and again and try to regain the zeal for eating correctly. I know I can do it. I have empirical proof. Good luck to me.

Getting back to healthy eating – November 20, 2012

Having been to Hawaii at the end of September and then spent three weeks from mid-October until early November in Spain and Portugal, I am up about 5 pounds. I am trying not to panic. I really wanted to have lost weight at this point especially with our nephew’s wedding coming up in a couple of weeks. This is hard time of year to lose weight what with Thanksgiving and Christmas and for me, the wedding and the birthdays. But I shall try.

Seared scallops, new potatoes and snow peas – October 12, 2012

This week we are trying to be extra careful in what we eat since we both gained a pound or two in Hawaii. We’ve eaten at home every night this week. Actually that’s not unusual. Except when we are traveling, we almost always eat at home. It is so much easier to control what goes into our dinner when we make it ourselves. And since it is so much less expensive to eat in, we can treat ourselves to fairly expensive ingredients like sea scallops.

I think I’ve mentioned this a million times before that scallops are my favorite protein. Tonight’s scallops were quite large which let John get a good sear without overcooking them. I steamed some small new potatoes and sauteed some snow peas in a half tablespoon of faux butter and butter spray. The snow peas got a little color on them which made them taste really good.
