Tilapia with tomatoes, olives, and kale. 7/9/25

This sauce is also called agghiotta and is typically served in Sicily with swordfish. I used this recipe from Serious Eats. https://www.seriouseats.com/agghiotta-di-pesce-spada-sicilian-braised-swordfish-with-tomatoes-and-olives-5212333#:~:text=Served%20with%20swordfish%2C%20the%20dish,Sicilian%2Dstyle%20swordfish%22). As you can see I cooked two pieces of tilapia and added kale and zucchini for vegetables.

Fish tacos, black beans, and mango salsa. 4/10/25

Our dinner of fish (tilapia) tacos was enhanced in a couple of ways. For the black beans I started with plain black beans with no flavoring. After they were rinsed I heated them up with a can of Rotel (spicy … Continue reading

Sumac Tilapia 10/30/24

Two healthy dinners in a row! John marinates the fish briefly in a citrus, sumac, turmeric, salt, and pepper bath and then roasts it for 12 minutes at 450F. I add chopped up tarragon from Sarah’s garden to the already … Continue reading
