Egg and Black Bean Nachos. 10/7/24
This is my favorite Sunday egg dinner. It is so easy to make and hits what I like about food – crunchy and salty elements. I lay down a layer of tortilla chips, maybe 10 or 12. Next I mix … Continue reading

Pan-fried gnocchi with mushrooms and kale. 9/30/24
This started out as a sheet pan recipe. https://cooking.nytimes.com/recipes/1022479-sheet-pan-gnocchi-with-mushrooms-and-spinach?smid=ck-recipe-iOS-share However, it is 99F outside and we are trying to keep the house cool so we changed it to a pan-fry cook and also decided to use raw kale instead of … Continue reading

Hummus, Tabbouleh, Skordalia. 9/24/24
I did not write a post Monday because we called for pizza delivery due to the extreme temperatures. Unfortunately it was even hotter on Tuesday (100F!) Luckily I had planned a no-cook dinner. The hummus was store-bought but I made … Continue reading

Noodles and Zoodles with Pesto. 8/24/24
Having homemade pesto in the freezer helped to streamline this dish. Here is the way our dinner came together. While the water was coming to a boil John zoodled the zucchini and I sautéed onions and garlic. As the pasta … Continue reading

Chickpea with Ditalini and Vegetables. 8/13/24
Note: to create a vegan or vegetarian dish omit Parmesan cheese. This yummy vegetable and legume creation comes together in about a half an hour if you are a fast chopper. I tend to start the onions cooking while I … Continue reading
