Meatloaf was on the menu tonight but since I had pigged out on the spaghetti and cabbage last night I decided to forego the red meat tonight. Chicken dinner is always a winner here!

Chickpeas, ditalini, and veg. 4/14/26

Today has been a vegetarian day – toast and peanut butter for breakfast, vegetarian pho at lunch, and for dinner, chickpea stew. I love vegetables so I had no trouble sticking to my menu today!
