Tilapia with rice and salad. 3/31/26
We were supposed to have fish tacos for dinner tonight but I had shrimp tacos for lunch so we pivoted to a plain dinner of roasted fish, rice, and salad. It wasn’t fancy but it was easy and a good … Continue reading

Lentils with turkey sausage 3/30/26
We are having one of our comfort dishes tonight, lentils with turkey sausage and vegetables. I have a phone call with my dear friend, Sophie, on Mondays late in the afternoon so I like to plan a dinner that John … Continue reading

Fish sandwiches with beans and slaw. 3/27/26
We opted for something easy tonight. I enjoy having these crunchy but low-calorie fish fillets in the freezer. They cook up in the air fryer in about 12 minutes. Along side of our open-faced fish sandwiches I heat up some … Continue reading

Whole grain penne with broccoli and tuna 3/25/26
This is a super easy, quick, and delicious dinner. In the time it takes to boil the water and cook the pasta, I have sautéed half an onion in olive oil along with garlic powder, red pepper flakes, and oregano. … Continue reading

Open-faced shrimp taco. 3/24/26
One problem I have with tacos is that I eat them too fast! I have the taco cradled in my hand and it is impossible to put down without the insides falling apart. My open-face taco is like a tostada … Continue reading

Fried rice with chicken, egg, and veg. 3/23/26
In the age-old question, what came first the chicken or the egg, I can say that John made the egg first in our dinner tonight. He scrambled the eggs in our large skillet first and then put them aside while … Continue reading

Pizza times two. 3/18 & 3/19/2026
On Wednesday of my no-planning week we decided we wanted pizza. Having dinner delivered hot to our door is always very alluring. John ordered an extra large Italian sausage pizza. The three of us ate half of it (2 slices … Continue reading

Corned beef and cabbage, potatoes, and carrots. 3/17/26
Happy St. Patrick’s Day! I am about half English, a quarter German, and a quarter Irish by my imprecise reckoning. I know there were Sullivans and Martins in my past. So at least Sarah and I have some claim to … Continue reading

Chicken burrito bowl. 3/16/26
In this bowl (hiding beneath the lettuce) are all the ingredients you might find in a chicken burrito. There is rice, chicken, corn, black beans, salsa, cilantro, and green onions. The chips take the place of a tortilla and the … Continue reading

Tube steak. 3/14/26
John always refers jokingly to hot dogs as tube steaks. We enjoy Nathan’s all-beef “tube steaks” and I served them with a salad and sauerkraut.
