Lentil stew with kale and turkey sausage – 2/13/17
For a vegan/vegetarian version of this dish omit the turkey sausage. Here is an easy, fairly quick, and filling stew. Although we prepare it with turkey sausage, it is easily made omitting the sausage for a vegan dish. First we … Continue reading

Boy, do I love meatloaf. But meatloaf is not a friend of trying to eat healthier. So I have been working on a ground turkey version. We ended up making a large meatloaf using 2 lbs. of lean ground turkey. … Continue reading

Chicken Tuesday – 2/7/17
I pushed Chicken Monday to Tuesday this week because we needed to eat up the leftover fish stew. (And it was easier to heat up something rather than make a whole new meal!) Once the water comes up to temperature … Continue reading

Chicken Monday – 1/16/17
Just a regular chicken Monday. Boneless skinless chicken breast, green beans, butternut squash, and a little packet gravy. The breasts were 8 ounces each so we have leftovers but we ate up all the vegetables.
Tuesday’s GBOF (giant bowl of food) – 1/10/17
Just as Monday is a themed dinner day so is Tuesday. I think Tuesday is my favorite, Giant Bowl of Food day. It consists of copious vegetables, a little bit of protein, low fat, and complex carbohydrates. It is important, … Continue reading

Chicken Monday (on Monday!) 1/9/17
As promised, I gave myself a night off last night and we had take-out Chinese food (moo shu pork and Mongolian beef, Yum!) Now back to cooking. There is a reason why we have Chicken Monday. It is a way … Continue reading
