A bonanza of leftovers – 10/17/16
After hugging Jon goodbye, it was time to take stock of what we had left over in the refrigerator. Hmmm, beans, rice, lasagna, peppers and onions, and the remnants of my lunches at Mongolian BBQ and Mad Pita Express. For … Continue reading
Seafood cakes! – 10/4/16
Our entire dinner consisted of seafood cakes, corn, and coleslaw but I made the corn first (2 large ears in a plastic bag with some butter and microwaved 5 minutes, so easy!) and we totally devoured it before I even … Continue reading

Since we are constantly to and fro-ing, it seems like we exist in semi-constant eat-down mode. A great dish for leftovers and bits and pieces is fried rice. John made this from leftover white rice from Sunday’s Chinese take-out, the … Continue reading

Lentil soup with turkey sausage – 9/2/16
Last week I made a new recipe, lentils with middle eastern spices. There was a bunch left over. I took that leftover portion and added turkey sausage plus additional carrots and celery. Easy and tasty!

Chickpeas, pasta, and vegetables – 8/31/16
Wait, didn’t I just make this? Yes, but it is so delicious and vegan besides! Anyway, it has different vegetables in it so the taste is a little different. I could eat this every week and I guess I do!

Chicken breast with vegetable rice – 8/29/16
Finally a Chicken Monday that actually falls on a Monday! We used the sous vide technique to cook our chicken breasts to a perfect temperature and then glazed them with BBQ sauce and put them under the broiler. This is … Continue reading
